Ingredients

  • ¼ cup peanut oil
  • 8 large shrimp (1.1 lbs total)
  • 4 tsp oyster sauce
  • 3.5 oz fresh ginger
  • 1.8 oz scallions

Instructions

Prep the scallions:Slice spring onions into thin rings.

Make the garlic sauce:Blend garlic cloves into smooth minced garlic.Pour a generous amount of cooking oil into a pan over low heat. Add the minced garlic and sauté slowly until pale golden. Add salt, granulated sugar and oyster sauce one after another, stir quickly to combine, then turn off the heat immediately to prevent burning and bitter taste.

Prep the prawns:Trim off prawn whiskers and legs, keep the heads intact.Cut along the prawn’s back (do not slice all the way through the tail), then open the prawn flat into a butterfly shape. Remove the black intestinal vein and clean out all innards from the prawn head.

Assemble for steaming:Spread the garlic sauce evenly over the flesh of every prawn.

Steam the prawns:Bring water in the steamer to a full rolling boil. Place the plate inside, steam on high heat for 5 minutes, then turn off the heat and take the plate out.

Finish with hot oil:Scatter the sliced spring onions on top. Heat one spoonful of cooking oil until smoking hot, then pour the hot oil evenly over the scallions and garlic to release aromatic fragrance.
