Ingredients

  • ¼ cup peanut oil
  • 6 Oysters
  • 4 tsp oyster sauce
  • ⅛ tsp (approx. 2g) salt
  • A pinch (approx. 1g) sugar
  • 3.5 oz fresh ginger
  • 1.8 oz scallions

Instructions

Prep the scallions: Finely chop the scallions.

Make the garlic sauce: Mince the garlic finely. Heat 30ml of peanut oil in a pan over low heat. Add the garlic and sauté slowly until pale golden. Add the salt, sugar, and oyster sauce. Stir quickly to combine, then remove from heat immediately to prevent burning and bitterness.

Prep the oysters: Scrub the oyster shells thoroughly with a brush. Insert the tip of a pair of kitchen shears into the seam of the shell, then pry upward firmly to pop it open. Discard the top shell and arrange the oysters on a steaming plate.

Steam the oysters: Spoon the garlic sauce evenly over each oyster. Bring the water in the steamer to a full rolling boil. Place the plate inside, steam on high heat for 5 minutes, then turn off the heat and remove the plate.

Finish with hot oil: Scatter the chopped scallions on top. Heat the remaining 20ml of peanut oil until smoking hot, then drizzle the hot oil evenly over the scallions and garlic to release their aromatics.
