Ingredients

  • 2 whole chicken leg quarters (1.1‑1.3 lb)
  • Garlic (1.8 oz)
  • Ginger (0.7 oz)
  • 1 green onion
  • 3 bird’s‑eye chilies (also sold as Thai chilies)
  • Salt (2 tsp)
  • Sugar (1 tbsp + 1 tsp)
  • Soy sauce (1 ⅓ tbsp)
  • Sesame oil (1 ⅓ tbsp)
  • Black rice vinegar (2 tsp)
  • Sichuan chili oil (3 ⅓ tbsp) l

Instructions

Cook the chicken legs:Rinse chicken leg quarters and pat dry. Place on a steaming plate, add green onion sections and ginger slices. Steam over high heat for 15 minutes once steamer reaches a full boil. Remove, discard ginger and green onion, allow chicken to cool completely.

Make the dressing:Mince garlic and ginger. Finely chop bird’s‑eye chilies and green onion.In a glass bowl, combine minced garlic‑ginger, chopped chilies and green onion. Add salt, sugar, soy sauce, black rice vinegar, sesame oil and Sichuan chili oil. Pour in reserved steaming broth from chicken, stir thoroughly.

Assemble:Tear cooled chicken by hand into bite‑sized shreds. Pour dressing over chicken, add remaining green onion. Marinate 15 minutes before serving.
